This was the first in the Alcoholic Beverages series from Academic Press and explains in technical terms, the science and technology of producing whisky, combined with information from industry experts on successfully marketing the product. World experts in Scotch whisky provide detailed insights into whisky production from the processing of raw materials, to the fermentation, distillation, maturation, blending, production of co-products and quality testing, as well as important information on the methodology used for packaging and marketing whisky in the twenty-first century. No other book covers the entire whisky process from raw material to delivery to the market in such a comprehensive manner and with such a high level of technical detail. Published in 2003. The foreword is written by Dr Alan Rutherford, former Chairman and Managing Director of United Malt and Grain Distillers Ltd. Alan also wrote the chapter on Scotch whisky distillation in Philip Morrice's "The Whisky Distilleries of Scotland and Ireland". In keeping with the Barnard tradition, it was done without attribution but we are happy now to acknowledge Alan's valuable contribution and as a mark of respect, anyone ordering this book will receive a complimentary down-load of that chapter from the Morrice book.
Unfortuntely this title is now only available in e-book format.
